1、首先准备三分肥七分瘦新鲜的猪前腿肉,因为前腿运动量大,所以肉紧而有弹 *** ,水分也偏少,这个部位的猪肉是最香的,非常适合包饺子吃。在买肉的时候,也可以闻一下肉有没有 *** 味,碰到这种肉不要买,就算焯水煮好后,臭 *** 味味道还在,没法吃。然后把肉洗净后,挤干表面的水分备用。诀窍一:选料
2、接下来煮花椒大料水。准备两个八角、花椒,加水清洗掉表面的灰尘。接着锅中加水,放入洗净的八角和花椒,开大火煮开,烧开后煮两分钟,花椒大料水就煮好了,加入肉馅里可以使调好的饺子馅会更香。最后关火稍微晾凉。诀窍二:大料水增香
3、把洗净的小葱切葱花备用,大葱斜切片,生姜切片,装入碗中,再倒入煮好温热的花椒水,用手抓拌均匀,把葱姜汁抓出来,再浸泡5分钟备用。
4、接下来把洗净的五花肉去皮,先切成薄片,再切细丝,最后切成小颗粒,这样方便把肉馅剁得的更均匀。最后用刀把肉馅剁碎,用刀剁出来的肉馅更好吃,可以用两把刀同时剁,不仅剁的快,也更容易把肉剁碎,嫌麻烦的朋友也可以放入绞肉机里绞碎。
5、肉馅剁好后放入盆中,加入半勺老抽调色,3勺生抽、一勺蚝油、盐、鸡精、白糖、十三香,搅拌均匀,先入个底味,用手朝一个方向搅至上劲。再把泡好的葱姜花椒水倒出来,这里有150克葱姜水,要分多次加入肉馅里,继续用筷子朝一个方向搅至上劲,让肉馅充分的吸收水分,葱姜水可以起到去腥增香的作用,这样做出来饺子馅吃起来会更香更好吃。诀窍三:葱姜水分次倒入搅拌。
6、2分钟后,第二次倒入葱姜水,继续搅拌,3分钟左右,肉馅变得有点粘稠的状态时,再倒入剩余的葱姜水,一直搅拌至肉馅有这种拉丝状时,打入一个鸡蛋清,再次搅拌均匀。加鸡蛋清可以给肉馅提鲜,还能让饺子抱团不易散,再倒入一些香油,可以使饺子馅更香,搅拌至肉馅上劲,非常有弹 *** 就可以了。诀窍四:加个鸡蛋清。
7、倒入切好的葱花,再把油烧热浇入葱花上面,激发出葱花的香味,这一步不仅可以锁住肉馅的水分和鲜味,而且让做好的肉馅吃起来特别的香。

一:猪肉母馅
选用猪前腿与五花肉各一半(更好比例是前腿肉350克,五花肉150克)。
猪肉500克,肉粉料10克,深色酱料90克,复合油料40克,水300克,姜末12克,复合香油10克。(油料调制,及深色酱料在下文介绍)。
二:牛肉母馅
牛肉450克,五花肉50克,肉粉料8.5克,深色酱料90克,葱椒水300克,葱椒油8克,复合油42克,姜末12克,蛋清1个,淀粉8克
三:羊肉母馅
羊肉450克,五花肉50克,肉粉料8.5克,深色酱料90克,葱椒水300克,复合油42克,复合香油6克,淀粉8克
油料的 ***
一:复合香油
用料:芝麻油、核桃油、葵花籽油比例:6:1:3
调配 *** :按比例混合一起即成
适用:高档特色饺子馅
二:复合油
用料:大豆色拉油或菜籽油、花生油、芝麻油比例:2:7:1
调配 *** :二者分别加热成熟,按比例加入芝麻油(不加热)混合一起即成

三:葱椒油
用料:葱75克、姜15克、花椒8克、八角2克、香叶1克、色拉油 *** 克、菜籽油 *** 克(或者花生油更好)。

深色酱料
将普通酱油和老抽与葱段 姜片 大料 香叶小火烧开,面酱炒熟,再与生抽和味极鲜混合而成,该酱料常用于调制肉类馅,例如:猪肉 牛肉 羊肉馅。
配比:黄豆酱油55克 老抽18克 生抽10克 味极鲜10克 面酱5克(加75克水25克油炒熟) 料酒2克
特色饺子品种 ***
一:精肉水饺
(素菜占比30%以内的可称之为精肉水饺,以猪肉母馅为例,配30%以内的素菜,如猪肉:韭菜配比就是500克:150克)
原材料用料配比:猪肉母馅500克,葱末75克,复合油12克,=587克
二:猪肉韭菜水饺
(以肉素比例1:1为配馅标准)
猪肉母馅500克,韭菜末500克,复合油45克,复合香油8克,素馅粉料8克=1061克
三:猪肉茴香水饺
(以肉素比例1:1为配馅标准)
猪肉母馅500克,茴香末500克,葱末50克,素馅粉料8克,复合油75克,葱椒油10克=1143克
素馅在调制时有哪些需要注意的?
*** 素馅时,尤其是蔬菜类的原料一定要除杂,将原料清洗干净,有些蔬菜需要焯水过凉,再压去部分水分,有些需要直接切碎压去水分,但调馅所用的蔬菜本身一定要保持 60% 的水分,这样馅料的口感才会鲜嫩不会发柴。
双丁素三鲜
1.有些馅料需要保持蔬菜翠绿的颜色,在焯水时需要在水中加入适量的盐、食用碱、色拉油等,以保持其绿色,防止氧化变质。
2.有些原料中含水量非常大,包制时非常容易出水破漏,如黄瓜、西葫芦等,我们就需要加入粉条、粉丝、腐竹或者大豆蛋白类辅料,以便吸收其中的水分,利于成品的包制,同时也增加了馅料中的营养成分。
3.制素馅的顺序是先放入油料将素馅拌匀,目的是锁住素料中的水分,这样再加入粉料调味后不会因为盐度过高使水分流出,包制饺子时就不会出水破漏;有些原料在切碎后,需立刻与油料拌匀,以阻断氧化变色。
