这才是酸菜鱼的正确做法,汤汁酸爽,鱼片嫩滑,好吃又下饭酸菜鱼汤汁酸爽,鱼片嫩滑,汤汁拌饭更是一绝,很多人都很喜欢吃,但是在家里,始终没有餐馆做的那么好吃,今天,阿南就教大家酸菜鱼的正宗做法,在家也能做出如餐馆般酸爽嫩滑的酸菜鱼。
首先在鱼的选择上就颇有讲究,做酸菜鱼的鱼种有很多,花鲢,草鱼,黑鱼都能做,但是花鲢和草鱼都会有很多的鱼刺,相较而言,黑鱼鱼肉嫩滑又少刺,最适合做酸菜鱼。
下班赶去菜场买的黑鱼,一般都有四五斤重,因为就我和 *** 还有上幼儿园的女儿吃,要不了这么多,就挑了一条稍微小点的,16块一斤,花了43块钱,自己切鱼片会比较麻烦,所以直接叫老板帮我们处理好了,不知道北方菜场有没有这待遇呢?
大家从 *** 中可以看到鱼骨上有很多的黑膜和血块,这些如果不清理干净,吃起来会特别的腥,我们要在流水下反复冲洗数次,将黑膜和血块彻底洗净。
鱼片也用水冲洗干净待用。
要想鱼片变得嫩滑,腌制非常的关键,鱼片放入容器中,加入姜丝,盐,鸡精,白胡椒以及一个鸡蛋清和3勺淀粉3勺水,按着一个方向持续抓抹1分钟以上。像 *** 中这样有小泡泡出来就可以了。
鱼骨中也加入姜丝、盐、鸡精、白胡椒粉抓抹均匀,腌制10分钟。
酸菜鱼少不了的就是酸菜,将酸菜清洗干净切成段。
酸菜鱼不能直接下锅炒,要先焯遍水,这样可以去除腌制过程中杂质,炒的时候也能更好的激发出酸味。
将处理好的酸菜和切好的泡笋放在碗中待用;
油锅烧热,下入白菜放入盐,炒制7成熟捞出垫底(最后盛鱼的容器,还可以换成豆芽)
油锅再次烧热,下入葱姜蒜爆香,放入辣椒和花椒炒出香味,火不能开太大,容易糊锅,接着下入酸菜继续翻炒3分钟
放点盐、醋、增加底味。加入开水煮开。
另起一锅,油锅烧热后下入腌制好的鱼块煎至两面发白,沿着锅边淋入料酒
将煮好的酸菜汤倒入鱼块锅内,加盐鸡精调味,继续煮5分钟。
最后的容器内摆好白菜和香菜,将锅中的鱼块酸菜等杂质捞出放入容器内
锅中只留汤底,将腌制好的鱼片先抓抹几下,以免时间过长发硬,一片片的下入鱼片
煮的时间不要过长,一般30秒左右就可以了,关火,连同汤汁一起倒入最后的容器内。
容器中间撒点葱蒜末,辣椒花椒之类的,淋上热油即可。
