大家好,我是厨师秀鹏厨,今天做一道青椒炒香菇,我们在平时 *** 鲜香菇菜肴的时候,都是先煮熟再进行炒菜,今天我们改进以往的做法,把香菇经过高油温炸制,成品干香筋道,并搭配青椒爆炒,鲜辣开胃,下酒又下饭,大家在家不妨试一试。

原料:

鲜香菇、葱姜蒜、小米辣、线椒

1、首先把原料改刀 ,香菇把根部去掉,再斜刀把香菇片成厚片,线椒斜刀切成片,小米椒从中间切开 ,大蒜去除根部,切成蒜片 ,姜切成菱形片 ,大葱切成马蹄葱。

2、下面开始兑制味汁 ,辣鲜露8克 鸡精一勺 生抽10克 味精2克 、酱油适量,把以上味汁搅拌均匀备用 ,下面开始上火 *** 。

3、锅上火烧热,加入适量的色拉油 ,用勺子搅动下让受热均匀 ,油温6-7成热的时候下入香菇炸香,炸香菇颜色金黄即可捞出,炸制时间是30秒钟左右 。

4、锅内留底油,下入葱姜蒜炒香 ,然后下入小米椒 ,线椒,上火煸炒,炒辣椒8成熟的时候下入香菇,煸炒辣椒和香菇香味融合之后,下入兑制好的味汁,倒入味汁之后,要加快速度翻炒,让味汁和原料充分的融合 ,翻炒均匀之后即可出锅 。

1.香菇切得尽量厚一点,片要大过油之后会缩小三分之一。

2.香菇过油炸,是试香菇增加香味,菌菇类菜肴油炸后味道更浓郁。

3.倒入味汁之后,要快速翻炒均匀即可出锅,长时间翻炒会影响菜肴美观 。
