1. 首先准备6斤新鲜的长豆角。做酸豆角选择这种长豆角，颜色翠绿比较嫩的，这样做的酸豆角才会更加好吃。
2. 把豆角清洗干净这些豆角不需要去掉头尾，去掉比较头尾话，做出来酸豆角做比较容易空心，腌好了的豆角就不会那么脆了，口感就会不好。清洗干净后，放在案板上，或透气的工具上晾干水分。将小米辣洗净，也放在案板上晾干。
3.接下来做个调料水，锅里倒入6斤的水，再加入花椒，生姜片，八角，然后加入 *** 克盐，200克 *** 。开大火煮开，再转小火，熬10后，关火。
4.然后把调料水晾凉，备用。将瓶子用水烫一下，倒扣放晾干。
5.现在豆角完全晾干水分了。
