脆辣鸡胗是一道家常菜，以鸡胗为主要食材，配上辣椒，葱姜蒜，食盐等配料 *** 而成， 口味香辣而爽脆，开胃又下饭，也是酒桌上不可缺的一道佳肴。

首先我们准备一下食材：鸡胗200克，放平 切成条状放在盆中。
清洗干净以后，放入食盐2克，胡椒粉1克，料酒4克，胡椒粉和料酒可以减少鸡胗的腥味，搅拌均匀，给鸡胗腌制入味。
小米椒20克，从中间切成两半。
小葱一把切成长段，与小米椒放在一起。
大葱一段切成马蹄片，生姜一块切成姜片，大蒜切成蒜片与葱姜放在一起。
现在我们开始烹饪，锅内烧油，油热的过程，我们把鸡胗控一下水。
油热以后，放入葱姜蒜翻炒出香味，放入干辣椒2克，豆瓣酱5克，辣椒酱5克，炒出红油，喜欢吃辣的朋友可以多放点辣椒酱。倒入鸡胗继续翻炒至鸡胗色泽均匀，放入蚝油3克，提一下鲜味。
翻炒均匀后倒入料酒4克翻炒几下，加入鸡粉2克，白糖4克，胡椒粉1克，快速翻炒化开调料，少放半勺清水，翻炒均匀。
这个时候再淋入少许水淀粉，勾一层薄芡，使调料与食材更好地融合，翻炒片刻后。
接着放入小葱和小米椒，出锅前可以淋入一点明油或者芝麻香油来提亮一下颜色，喜欢吃辣的朋友也可以淋入少量辣椒油，使鸡胗的味道香辣开胃，整道菜色泽还能更亮，翻炒均匀。
收一下汤汁，汤汁粘稠以后，这样就可以出锅装盘了，最后撒上一把熟芝麻作为点缀。
