1、豆腐干,中国传统豆制品之一,是豆腐的再加工制品
2、 今天老刘就来分享一下“五香豆腐干”做法,喜欢的朋友可以先收藏,有空自己试一下。
3、下面开始介绍所需要的食材:
老豆腐、八角、桂皮、香叶、干辣椒、小茴香、食盐、蚝油、五香粉
4、先把老豆腐切成小块,再把切好的老豆腐块放入烧开的蒸锅中大火蒸20分钟,蒸熟的豆腐干吃起来更有弹 *** 。时间到时,夹出晾凉,蒸好的豆腐表面形成很多孔,等会卤制时更容易入味
5、锅中放入凉水,再放入八角、干辣椒、香叶、桂皮、小茴香,再放入生抽、老抽、三勺食盐、蚝油,蒸好的豆腐块也放进去,然后大火烧开,中小火慢炖20分钟,烧的时候尽量不要搅动它,防止豆腐块搅碎
6、时间到时,关火,再放入五香粉增加五香味,搅拌均匀盖上锅盖,泡八个小时以上,让豆腐块完全吸收五香调料的味道。时间到时,先把纱布垫在锅中,把豆腐块整齐地摆在纱布上,摆的时候要摆整齐
7、把所有豆腐块摆放整齐以后,再把上面的纱布给它扎紧,上面再摆上篦子,上面压上重物,压八个小时。压的时间到时,拿开重物打开纱布,看一下,体积缩小了很多,水分压干了,豆腐干也变得非常有弹 ***
8、再把豆腐干摆入盘中,然后摆在冰箱冷藏保存,豆腐干炒肉片、炒辣椒特别好吃,自己做得干净又卫生,而且成本又低,这个豆腐两三块钱已经,外面豆腐干要将近十块钱一斤呢
