猪肉、青椒、胡萝卜、香菇、生抽、料酒、鸡蛋、老抽、蚝油、玉米淀粉、蒜末、姜末、葱末、香醋、白糖、芝麻油、郫县豆瓣酱




4、先把猪肉切成肉丝,放入碗中腌制下,先放入一个蛋清,再淋入生抽,少许料酒去腥、老抽上色、蚝油、上手揉抓均匀,盐就不用放了,因为调料都是咸的,抓匀后放入半勺玉米淀粉,再次抓匀,再封上一层食用油,腌制半个小时备用




5、青椒去蒂去籽以后切辣椒丝,香菇去蒂以后切片再切香菇丝,刨去外皮的胡萝卜先切片再切胡萝卜丝,放入盘中备用。再调个料汁,先放入生抽、香醋、老抽、料酒、白糖两勺、少许芝麻香油,少许清水,一勺玉米淀粉,搅拌均匀备用



6、油温四成热倒入酱好的肉丝,低油温把肉丝滑熟,滑熟以后盛出备用,再把青椒、香菇、胡萝卜一起放入锅中过下油,时间不要太长,三十秒就可以了,配菜过油以后吃起来口感比较软,比过水好,然后盛出沥干油备用



7、热锅倒油,先放入一勺郫县豆瓣酱炒出红油,再放入蒜末、姜末爆香,再放入肉丝配菜一起翻炒,再放入调好的料汁,翻炒均匀以后淋入少许明油,再次炒匀就可以出锅了,再撒上少许葱花点缀就可以开吃了
